TOFU BALLS

FOR 20-25balls

INGREDIENTS 

FOR THE BALLS MIXTURE

-400g firm tofu

-1 onion, finely diced

-2 cloves garlic, finely diced

-75g chickpea flour

-45g breadcrumbs

-1 Tbsp soy sauce 

-salt and pepper to taste 

FOR THE GLAZE

-2 Tbsp tomato paste 

-2 Tbsp soy sauce

-8 Tbsp oil

-2 Tsp each paprika and cumin

-1 Tsp garlic powder 

METHOD

-Drain your tofu and crumble it in a mixing bowl

-Add all the balls mixture ingredients to the tofu

-Mix and mash everything with your hands until you reach a consistency you can portion into bite-size balls

-Portion your balls and set aside

-In a smaller bowl combine the glaze ingredients and whisk to emulsify

-Roll the tofu balls in the glaze mixture, coating them evenly

-Arrange the tofu balls on a baking sheet lined with parchment paper

-Bake at 400F for about 35-30 minutes

-Rest for 5 minutes out of the oven before enjoying
