SUPER COOKIES
Very delicious and nutrient dense, this anti-inflammatory treats are rich in Omega-3s, fibers, healthy fats and proteins. Perfect to be enjoyed with a nice cup of tea!
INGREDIENTS
-1/2 cup raisins
-1/2 cup ground flax seeds
-1/2 shelled hempseed
-1/2 cup ground almonds
-1/2 cup pumpkin seeds
-1 cup old fashioned oats
-1.5 tbs chia seeds
-2 tsp cinnamon
-1 tsp vanilla extract
-1 tsp baking powder
-1/4 EV olive oil
-1/4 cup maple syrup (or honey)
-1 medium egg
PROCEDURE
-preheat oven to 350F
-line a cookie sheet parchment paper and set aside
-Soak raisins in boiling water for 5 minutes
-in a big bowl, mix all the ingredients except for the liquids and mix to combine
-add eggs, maple syrup and vanilla and mix to form a sticky and uniform mixture
-shape into 6-8 cookies
-bake for 10 min on prepared cookie pan
-cool on a cookie rack and enjoy!
