VEGAN PUMPKIN CAKE

INGREDIENTS

DRY

-50g whole wheat flour

-200g all purpose flour

-200g almond flour

-120g cane sugar

-1tsp baking soda

WET

-250g pumpkin puree (you can bake your pumpkin, or use the canned one!)

-grated zest of 2 oranges

-1tbsp grated fresh ginger

-30g vegetable oil (I use avocado or olive oil)

-150g freshly squeezed orange juice (about 2-3 oranges)

CHOOSE A TOPPING YOU LOVE, LIKE…

-pumpkin seeds

-candied orange peel

-candied ginger

METHOD

-line a 8in cake pan with parchment paper

-preheat your oven at 350F

-combine all the powder ingredients in a big mixing bowl

-separately, combine all the wet ingredients

-combine the wet mixture into dry mixture

-using a whisk mix well to combine

-transfer the cake batter into the prepared cake pan 

-top with your favorite toppings

-bake for 25-30 minutes, until a toothpick inserted in the center comes out clean
